Ingredients: serves 6
1 2/3 lb/75 dkg beef, 9 oz/25 dkg pork, 5 1/4 oz/15 dkg smoked bacon, 3-5 cloves garlic (2 teaspoon garlic cream), 1/2 teaspoon baking soda, about 1 level tablespoon salt, 1/2 teaspoon hot Red
Gold (hot cherry pepper paste), 1 teaspoon savory, 2 tablespoon cooking oil for browning
Dice up the meats and bacon and grind everything up, along with the garlic, 4-5 times. Place in a bowl, add the remaining ingredients, and work the mixture together thoroughly for 8-10 minutes. Cover and refrigerate 6-8 hours or overnight for the flavors to blend. Next day, with your hands wet, shape the mixture into finger’s width sausages. Grill on a hot oiled rack over embers, turning them over, 10 minutes. They can also be prepared stovetop in a Teflon skillet. Serve with mustard and fresh bread.
