Dödölle Potato Dumplings with Spicy Sour Cream - (Dödölle csípős tejföllel)
Ingredients: serves 6
2 2/3 lb/1.2 kg potatoes, 1 teaspoon salt, About 7 oz/20 dkg all-purpose flour, 3-4 onions, 3 1/2 oz/10 dkg rendered fat (8 tablespon cooking oil), 7 oz/20 dkg smoked ham
To Serve: 1-2 teaspoon “Strong Steven” hot cherry pepper paste or Red Gold, 17 1/2 oz/5 dl sour cream

Peel the potatoes and slice into thin rounds. Cook in enough lightly salted water to cover, about 1 qt/lt. Toast the flour in a skillet on medium heat, stirring rigorously until the color of a roll, about 8-10 minutes. With a wooden spoon, mix and mash the potatoes in the cooking water thoroughly, sprinkle in
the flour. Stirring rigorously over the heat cook 2-3 minutes, pull aside and continue stirring intensely
another 5 minutes. This is an important step and you can’t be lazy about it. When ready, set aside, and as a restful activity after the exertion, grate the onions or mince them very fine. Brown in the hot oil until the color of yellow straw. Next, scoop out dumplings from the potato mash with a greased (oily) spoon, and turn them in the hot oil and onions, browning them a slightly. Dice the smoked ham into small
cubes, brown, and pour over the dödölle. To serve, drizzle with plenty of sour cream seasoned with hot paprika sauce.
