Ingredients: serves 6
10 1/2 oz/30 dkg lentils, 2-3 medium onions, 10 dkg goose fat (7-8 tablespoon cooking oil), 7 oz/20 dkg smoked sausage, 2 tablespoon all-purpose flour, 1 smoked turkey leg, 1 smoked goose breast or 1-2 smoked goose leg, 7-9 oz/20-25 dkg beef brisket, 3 1/2 oz/10 dkg barley, 2-3 cloves garlic (1 teaspoon garlic cream), 1/4 teaspoon “Strong Steven” hot cherry pepper paste, 2 bay leaves, 1/2 teaspoon ground black pepper
Pick through and rinse the lentils. Peel and mince the onions fine and wilt them in the goose fat in a pot that can also go into the oven. Slice the sausage into rounds and brown along with the onions. Dust with flour, toast for 1-2 minutes, and add about 2 qt/lt
cold water. Stir in the smoked meats, lentils and barley. Season with the crushed garlic, “Strong Steven” hot cherry pepper paste, bay leaf, and pepper and stir a few times until it comes to a boil. Cover and bake at slightly below medium heat (260°-280°F/130°-140°C) for about 2 1/2 hours. While it’s baking, shake the pot a few times, stirring
the food in this manner. Adjust the seasoning when done.

Instead of lentils, the dish can be made with dried beans soaked in cold water and rinsed beforehand, but this requires about 2 hours additional cooking time.
