Ingredients serves 4:
4 slices boned breast of turkey (each about 2 3/4 oz/8 dkg), salt, 2 tablespoon cooking oil, 3 1/2 oz/10 dkg very thinly sliced bacon, 1 head lettuce, 4 medium tomatoes, 2 hardboiled eggs, 12 thin slices of sandwich bread, 3 1/2 oz/10 dkg mayonnaise, potato chips to serve
Pound the turkey breasts slightly and salt them. Fry in the oil about 2-3 minutes on each side. Cook the bacon until crisp. Wash the lettuce and tear off individual leaves. Remove the stems from the tomatoes and slice the tomatoes into rounds along with the eggs. Toast the bread and spread with mayonnaise. Cover four slices of bread with lettuce leaves, place a thin slice of cooked turkey over each and top with a tomato slice. Put a slice of bread with the mayonnaise side down over these followed by lettuce leaves, divide the crisp bacon among the stacked sandwiches. Pile the remaining tomatoes and eggs equally over the bacon and place the rest of the bread, mayonnaise side down, on top. Cut off the crust all around the bread and cut the sandwich on a diagonal in both directions – making four pieces. Place a toothpick in each triangle and serve fresh with crispy chips.
