Ingredients serves 4:
23-24 2/3 oz/65-70 dkg lean ground turkey meat (upper thigh is best), 2 2/3-3 1/2 oz/8-10 dkg grated Gruyere cheese, 4 scallions, about 3 tablespoon breadcrumbs, 2 tablespoon mustard, 1 clove garlic (1/2 teaspoon garlic cream), 1 teaspoon salt, 1/4 teaspoon ground black pepper, cooking oil for frying
To serve: 8 hamburger rolls, 4-6 tablespoon mayonnaise, 8 leaves lettuce, few slices roasted zucchini and eggplant, peppers
Mix together the ground turkey with the grated cheese, thinly sliced scallions, breadcrumbs, mustard, and crushed garlic (garlic paste). Add salt and pepper and with your hands wet, make 8 equal size patties about the thickness of your finger. Oil a ribbed grill pan, heat up to medium and grill the burgers 1-2 minutes on each side. Reduce heat and continue grilling an additional 2-3 minutes making sure they are cooked through. Serving is next. Slice the rolls in half, warm them slightly on the grill pan and spread mayonnaise on the bottom half. Place a lettuce leaf folded in half over it and top with the freshly grilled burger. Cover with a few slices hot roasted vegetables and put the other half of the roll on top. Serve immediately.
