Ingredients serves 4:
4 chicken legs, 1 teaspoon salt, 2 level teaspoon “Strong Steven” hot cherry pepper paste, 5 oz/15 dkg seasoned corn flakes or tortilla chips, 4-5 tablespoon all-purpose flour, 3 eggs, cooking oil for deep frying
Remove the skins from the chicken legs and cut them in two at the joints. Rub with salt and Strong Steven. Crumble the corn flakes or tortilla chips by wrapping them in a clean kitchen towel or paper bag and pounding them with a meat tenderizer or rolling pin. You may also crush them into fine crumbs with your hands. Coat the chicken in the flour, beaten eggs, and the seasoned corn flakes or tortilla chips. Fry them in a large skillet in medium hot deep oil for about 15 minutes, as you would fry chicken traditionally. Serve with steamed rice or fried
potatoes and a salad.
