Ingredients serves 8:
About 2 2/3 lb/1.2kg boned pork chops, salt, ground white pepper
Stuffing: 10 1/2 oz/30 dkg cooked smoked ham or daisy ham, 10 1/2 oz/30 dkg pickles, 2-3 tablespoon sour cream, 2 2/3oz/8 dkg grated smoked cheese, 1/2 small onion (1 teaspoon onion cream), 1-2 cloves garlic, (1 teaspoon garlic cream), about 1/4 teaspoon food seasoning, oil to coat the baking pan
Topping: 16 oz/450 grams sour cream, 1/4 teaspoon ground black pepper, 1/2 teaspoon food seasoning, few drops lemon juice, 5 1/4 oz/15 dkg trappist cheese (mild Colby cheese comes closest)
Cut the pork chops into 8 equal slices, pound them thin, salt and pepper lightly and set aside. Grind the smoked ham and pickles together and mix with the sour cream, smoked cheese, finely minced onion (onion cream), crushed garlic (garlic cream), and food seasoning. Pile the flavorful mixture on top of the meat and spread evenly. Roll up each slice and secure with a toothpick so it will remain intact while baking. Oil the inside of a baking pan or dish just large enough to hold the meat rolls next to each other. Prepare the topping. Add the pepper to the sour cream along with the food seasoning, lemon juice and finally the grated cheese. Spread evenly over the meat rolls and bake in a preheated oven at medium heat (360°F/180°C; 330°F/165°C convection oven) for 45-50 minutes. Serve with baked potatoes accompanied with sour cream seasoned with garlic, salt and black pepper. It is excellent served cold as well, in that case, accompanied by potato salad.
