Ingredients serves 4:
9 oz/25 dkg spaghetti, salt, 4 tomatoes, 6 oz/15 dkg Gruyere or other hard cheese, 3 teaspoon white wine vinegar, 1/8 teaspoon ground white pepper, 3 cloves garlic or 1 teaspoon garlic cream, 9 teaspoon olive oil, 1 teaspoon Italian seasoning mix (thyme, rosemary, basil)
Cook the broken pieces of spaghetti in slightly salted boiling water, drain, rinse under cold water and let it drip completely. Scald the tomatoes, remove the skin and cut out any stems. Cut them in half, scrape out the seeds and dice them into about 1/2”/1 cm cubes. Chop the cheese to a similar size. Stir in about 1/4 teaspoon salt and pepper into the vinegar, season with the crushed garlic or garlic cream. Slowly drizzle in the olive oil, stirring constantly. Adding the green seasonings will impart the
final flavor. Place the spaghetti onto a dish and toss with the tomatoes, cheese, and oil and vinegar.
