Ingredients serves 2:
11 oz/30 dkg cooked peeled beets, 1 small tart apple, 3/4 dl thick cooking (heavy) cream, 3/4 dl mayonnaise, 1-2 teaspoon freshly grated horseradish or mild horseradish, 1/2 teaspoon powdered sugar, salt, ground white pepper
Dice the cooked beets into about 1/2”/1 cm cubes. Peel and grate the apple into large pieces. Mix with the heavy cream, mayonnaise, horseradish, salt, pepper and sugar according to taste. Mix in the beets, cover, and refrigerate at least overnight for the flavors to develop fully.
Preparation time: 10 minutes + cooking and peeling the beets and refrigeration
