Shepherd’s Egg Barley  -  (Pásztortarhonya)
2 oz smoked bacon, 1 small red onion, 3 tablespoons oil, 1 cup of egg barley, 1 teaspoon of salt and sweet paprika each, 1/2 teaspoon ground black pepper, 3 medium potatoes

Cube the bacon, melt in a pot or heavy iron kettle. Peel and grate the onion, sauté over the bacon. If the rendered fat is not enough, add some oil. Add the egg barley, sauté until golden. Mix in the salt, black pepper and paprika. Immediately cover with 2 cups of boiling water. Add the potatoes cut into 3/4” cubes and cook, covered, over medium heat until tender. Alternatively, bring the water to a boil, cover it and bake in an oven over medium heat for about 20-25 minutes. Enrich in with sliced hotdogs or sausage if desired.
