Ingredients:
2 medium red onions, 4-5 tablespoons oil, 2 cloves of garlic, 1/2 teaspoon caraway seeds, 1 teaspoon of sweet paprika, 1 tablespoon of half hot, half sweet paprika paste, 1 green pepper and tomato each, 1 level tablespoon of salt, 3 lb potatoes
Peel and chop the onion, sauté on the oil. Add the crushed garlic and the caraway seeds, sprinkle on the paprika and add a bit of water. Mix with the paprika paste, the chopped green pepper and tomato, salt to taste. Peel the potatoes, cut into wedges and add to the paprika base. Pour on enough water to barely cover. Stir carefully a few times and cook, covered, for about 35 minutes until tender. In some regions of Hungary, the cooked potatoes are mashed coarsely using a fork before serving. Enrich this dish with sliced sausage or hotdogs if desired.
