Turkey Ragout as in Bakony with Cheese Dumplings  -  (Bakonyi pulykaragu túrós galuskával)
Ingredients:
1 red onion, 6 tablespoons oil, ,1 level tablespoon sweet paprika, 2 teaspoons salt, 1/2 teaspoon ground caraway seeds, 1 teaspoon hot paprika paste, 1 clove of garlic, 1 green pepper and tomato each, 1 lb mushrooms, 3/4 cup sour cream, 1 heaping tablespoon flour, 1/4 cup heavy cream, 1 lb turkey breast, de-boned, 1/2 teaspoon ground black pepper
for the side dish:
3 rolls, milk to soak the rolls, 10 oz cottage cheese, 3 eggs, 5 heaping tablespoons flour, 2 teaspoons salt, 1/2 bunch of dill

Peel and finely chop the onion. Sauté on 3 tablespoons of oil until light brown. Sprinkle on the paprika and immediately add 1 pint of water before the paprika could burn. Add 1 teaspoon of salt, caraway seeds, the paprika paste and the crushed garlic. Remove the stem of the pepper and tomato, cut both into small cubes and add to the onion base. Cook over medium heat for 20 minutes then push the entire sauce through a sieve. In the meantime, cut the sandy ends off the mushrooms, wash with running water. (Do not soak – they will get soggy.) Cut into wedges, add to the sauce and cook for 8 minutes. Mix until smooth the heavy cream and the sour cream with the flour, adding a bit of the sauce to prevent it from curdling when added to the hot sauce. Pour the mixture into the sauce. Cook, stirring constantly, for 3 minutes, while it thickens. Cut the turkey breast across its grain into large flat slices, then again into strips. Heat the remaining oil in a skillet. Add the meat and fry for
3 minutes, stirring. Add 1 level teaspoon of salt and ground pepper to taste, fry for another 3 minutes, then mix with the mushroom sauce. For the cheese dumplings soak the rolls in cold water, squeeze. Push the cottage cheese through a sieve, add the rolls, the eggs and the flour, 1 teaspoon of salt and the chopped dill. Cook in lightly salted water
the same way you would prepare traditional dumplings (see Dumplings with Egg). Boil for 2 more minutes after the dumplings have risen to the top, then strain. Rinse under cold running water to prevent them from sticking to each other, then mix them with 1-2 tablespoons of oil. Arrange the dumplings around the turkey before serving.
