Pork Chops as in Temesvár – (Temesvári Sertésborda)

Ingredients:
1 1/2 lb pork chops, salt, ground black pepper, 2 oz flour, 4 tablespoons oil, 1 small red onion, 1 teaspoon sweet paprika, 1 medium tomato, 1 large green pepper, 10 oz string beans, 3/4 cup sour cream

Cut the meat into 4 large slices. Flatten them slightly. Rub in with salt and ground pepper, coat with flour. Fry on each side until red, then set aside, covered. On the remaining oil, sauté the finely chopped onion. Sift on the paprika and stir. Immediately cover with C cup of water. Add the meat slices, the tomato and the pepper, cubed, and cook over low heat for 10 minutes, covered. In the meantime clean the string beans and cut them into 1” long pieces. Remove the meat slices when done, replace them with the string beans. Pour on enough water to cover it. Add some salt and pepper and cook until tender. Mix the sour cream and the flour until smooth and add to the beans. Boil for a few minutes to let he sauce thicken. Re-heat the meat slices in the sauce before serving.
