14 oz pork kidney, 10 oz pork marrow, 1 red onion, 6 tablespoons oil, 1 level teaspoon salt, 1/4 teaspoon ground black pepper, 1 level teaspoon marjoram, dash of paprika
Cut the kidney in half into two flat pieces, clean and dip into boiling water. Drain well and cut into nice oblong pieces. Wash and chop the marrow. Peel the onion, grate it finely and sauté it in hot oil. Add the kidney and sauté until all surfaces turn white and it turns tender at the same time. This takes about 5-6 minutes. Add the marrow, spice to taste. Sauté for another 2 minutes over high heat. Best if served with boiled potatoes with onion. You can vary this recipe by adding a few beaten eggs at the very end and frying it, stirring, until done but not too hard. For this amount use 4-6 eggs.
