1 lb de-boned pork chops, salt, 2-3 oz smoked bacon, 5 oz ham, 5 oz pickles, 1/2 teaspoon tomato paste, 1/4 teaspoon ground black pepper, 1 teaspoon flour, 1/2 bunch of parsley, 4 teaspoons oil
Cut the meat into 4 even slices, flatten and salt them. Set aside. Slice the bacon into thin strips and melt them over low heat. Add the ham and fry them a bit longer. Add the pickles then the tomato paste, sprinkle on 1/4 teaspoon of salt and pepper. Sift on the flour, cook for 30 seconds and add 3/4 cup of water. Bring to a boil for barely a minute, add the chopped parsley. Fry the steak on hot oil for 2 minutes on each side. Pour on the ham and pickles ragout. Serve with French fries.
