1 1/2 oz smoked bacon, 1 small red onion, 1 level teaspoon sweet paprika, 4 medium size potatoes, 1 heaping teaspoon, salt, handful of flat pasta torn, rather than cut into large pieces (lebbencs), 1/2 bunch parsley
Cut the bacon into small cubes, let it melt in a pot or iron kettle (use a bit more if you are cooking in a kettle). Clean the onion, mince and sauté it over the bacon fat a bit. Sprinkle on the paprika and cover with 1 1/2 quarts of water. Put in the peeled, cubed potatoes, salt and cook over medium heat for 10-25 minutes until halfway done. Put in the lebbencs and the finely chopped parsley and cook until done for about 10 minutes. You can add 1 cubed green pepper and tomato each at the same time with the pasta if desired.
– It’s customary to fry the lebbencs pasta on the fat of bacon. Pat dry and set aside before cooking.
