1 small red onion, 10 oz yew cheese (cottage cheese can be substituted in whole or in part), 2 tablespoons sour cream, 1 teaspoon mustard, 1/2 teaspoon ground caraway seeds, 1 teaspoon sweet paprika
Peel and finely chop the onion. Push the cheese through sieve, mix well with the onion. Mix in the sour cream, spice with caraway seeds and paprika, mix well. Add salt to taste. Keep refrigerated until serving.
– You can vary this recipe by adding ground pepper and garlic.
– Cut out stem and veins of a green pepper and fill with the körözött, refrigerate and cut across into thin slices. Substitute 2 oz of butter instead of the sour cream – this makes the mixture firmer and easier to cut.
– You can use a pastry bag to form puffs of the körözött. In this case, beat the mixture before forming until fluffy.
