Chicken Steak with Cheese Sauce and Paprika Galuska Dumplings - (Csirkeszték sajtmártással és paprikás galuskával)
Ingredients: serves 4
21 oz/60 dkg boneless chicken breasts, 1 level teaspoon salt, 1/8 tespoon ground black pepper, 4 tablespoon cooking oil
Sauce: 14 oz/4 dl milk, 3 1/2 oz/10 dkg
grated Edam cheese, 3 1/2 oz/10 dkg
grated blue cheese, 1 1/3 oz/4 dkg butter (or oil), 2 level tablespoon all-purpose flour, 2 cloves garlic (1 teaspoon garlic cream), 3 1/2 oz/1 dl cooking (light) cream, 2-3 tablespoon dry white wine, ground white pepper, food seasoning
Paprika Dumplings: 18 oz/50 dkg allpurpose flour, 4 tablespoon mild Red Gold (sweet cherry pepper paste), 2 tablespoon mild goulash cream, salt, 2 eggs, 10 1/2 oz/3 dl cold water, 1 tablespoon cooking oil

Prepare the side dish first. Pour the flour into a bowl, add the salt, eggs, Red Gold, and goulash cream. Blend together with the water so the dough is neither too soft nor too stiff, don’t work it too much. Using a small teaspoon and dipping it in the water beforehand to prevent sticking, cut bite-sized
bits of dough into lightly salted boiling water, as you would making traditional galuska. They are done
when the dumplings have risen to the top and have cooked 1-2 minutes. Drain and let them drip in a strainer, then stir in the oil to prevent their sticking together. Have 4 chicken breasts cut into large slices. Pound them thin, salt and pepper them, and set aside. For the sauce, heat the milk to boiling,
add the two cheeses and melt them, stirring. Melt the butter in a small pan and toast the flour in it a light beige, about 1 minute. At half time add the crushed garlic (garlic cream). Pour the cheese sauce over it and whipping constantly with an eggbeater, cook until it thickens, 3-4 minutes. Remove from heat, you may strain it if you wish to make the sauce more velvety. Add the light cream, wine, season with pepper, and if necessary, add more salt. Heat the oil in a skillet and brown the meat 3 minutes on each side. After draining on a paper towel, put one on a plate, pour the cheese sauce over it, and serve the dumplings on the side.
